Do you love to spoil yourself with delicious food during your holidays? Enjoying meals without having a guilty conscience? Then you will thoroughly enjoy your stay at the Rosenalp in Oberstaufen. A major aspect at our health resort is healthy nutrition. Therefore we offer a wide range of various nutritional possibilities to choose from.
We guarantee: delicious cuisine; healthy meals will be served as half-board, á la carte or light meals. The Rosenalp kitchen team will spoil you even during a cure diet. Are you vegetarian or do you keep to a vegan diet, or do you have food intolerances and have to be careful about what you eat? Our Head Chef, Helmut Beng and his team will take care of you, whatever your requirements are.

Metabolic Balance®
Metabolic Balance® is a holistic nutritional concept that helps you to regulate your weight and metabolism naturally and maintain it in the long term. This nutritional form is based on your own personalised nutrition plan that is put together according to the results of a blood analysis. The foods are chosen that favour a natural release of insulin, so that the metabolism is regulated and harmonised.
There are four phases of the nutritional change, according to Metabolic Balance®:
- The preparation phase: you will gently detoxify your body for two days with light meals and bowel cleansing to prepare your body for the metabolic change.
- The strict transitional phase: for a minimum of 2 weeks your body will begin to adjust to the new, healthy nutrition. You will receive one portion of protein as well as fruit and vegetables at each mealtime. Fat and sugar aren’t allowed.
- The slacker transitional phase: Food items that weren’t allowed in phase II can be carefully introduced. This tests whether weight loss and the feeling of well-being can be maintained with these foods. The variety and amount vary according to tolerability.
- The maintenance phase: This is the start of fitting Metabolic Balance® into your daily life. Your ideal weight has been reached and you feel good. You will continue to follow the basic rules of Metabolic Balance® to maintain a healthy functioning metabolism and to maintain your weight permanently.

Tipp: If you already live according to Metabolic Balance® and have your own individual nutrition plan then we will fit in with you. Bring it with you to the Rosenalp or send it to us beforehand and our chefs will cook the foods that are allowed, especially for you.
Soya milk
Soya milk is a vegetable drink that is high in unsaturated fatty acids and contains neither cholesterol nor lactose. It is made by soaking and pureeing dried soya beans. After pressing, an emulsion of oil, water and proteins are retrieved, which resembles the structure of milk. This makes soya milk similarly versatile. Especially in vegan or vegetarian cooking, soya milk is often used as a substitute for cow's milk. Soya milk and soya bean-derived products such as tofu are also popular in Asian cuisine.
Commercially available soya milk has a similar high protein content as cow's milk, carbohydrate and fat content are lower. It contains less vitamin B2 and calcium than cow's milk, vitamins B12 and C are completely absent.
By the way: Soya milk has found its place in the kitchen of the Rosenalp. This fact should make you happy if you are lactose intolerant or vegan. Tip: Let us know when you are booking that you prefer soya milk. Therefore the Rosenalp and our kitchen and service team will be informed prior to your arrival.
Lactose-free food
A good 15 percent of the German population suffer from lactose intolerance and experience the unpleasant symptoms of flatulence or abdominal cramping after eating dairy products, yoghurt or ice-cream. Your body is unable to break down lactase - also called lactose - due to a lack or absence of the digestive enzyme lactase. Those who suffer from this food intolerance depend on a lactose-free diet. Dairy products from cow, sheep or goat are taboo!
If you suffer from lactose intolerance, you can still enjoy your stay in the Rosenalp. Lactose-free food is among the dietary forms offered in our health resort.
Tip: Inform us about your lactose intolerance when you make your booking. Our kitchen team has a lot of experience with lactose-free food and will spoil you with delicious, lactose-free dishes.
Gluten-free food
Celiac disease is the name given to food intolerance, in which sufferers depend upon a gluten-free diet. They respond with an immune reaction to gluten, the so called gluten protein. This is mainly contained in cereals such as wheat, rye, spelt, oats or barley, but also in all products made from it. In addition, gluten is often used as a binder in ready-made meals, seasonings and sauces. Anyone who has to eat a gluten-free diet should therefore always check the ingredients list of a product carefully. A guaranteed gluten-free diet is when a person lives on meat, fish, rice, fruits and vegetables.
If you depend on gluten-free food, you can look forward to a creative kitchen without gluten in the Rosenalp. Head Chef Helmut Beng and his team are specialists in using gluten-free products, to create sophisticated and delicious dishes.

Vegetarian diet
No fish, no meat, instead fruit and vegetables. Vegetarianism is a diet and way of life in which, in addition to plant foods, some products deriving from live animals are included in the diet. But this is exactly where opinions differ when it comes to vegetarian nutrition. What is right for one vegetarian is an absolute taboo for the other. Therefore one differentiates four subgroups:
Ovo lacto vegetarians consume dairy products and eggs. This is the largest group of vegetarians.
Ovo vegetarians abstain from dairy products, but eat eggs. This diet is also chosen for health reasons, such as lactose intolerance.
Lacto vegetarians do without eggs, but yogurt, cream and other dairy products are consumed.
Vegans avoid all foods of animal origin. Veganism is the most consistent form of vegetarianism.

Vegan diet
Vegans are committed to the consistent abstaining of products deriving from animals. For those who are vegan, fish, meat and all products originating from animals are taboo. With vegan nutrition, there are no dairy products, eggs or, for example, honey on the table. In order not to suffer from deficiency symptoms in the long term, it is particularly important to deal intensively with the topic of vegan nutrition. There are certain products with which it is possible to provide the body with those vitamins and minerals that otherwise can only be absorbed through consuming animal products.
Are you a vegan and still want to enjoy your holidays? At the Rosenalp, Chef Helmut Beng will spoil you with refined vegan dishes, making sure that you are provided with all the essential nutrients your body needs.
Tip: If you are a vegan and are interested in a detoxification treatment, we can recommend a Schroth Cure in the Rosenalp. The Schroth Cure diet is purely vegan, except for the honey which can be added if required.
